INGREDIENTS

1 tablespoon olive oil

1 small jalapeño chile, seeded and diced

1 scallion, minced

½ garlic clove, minced

¼ cup minced fresh cilantro

1 small tomato, diced

¼ teaspoon ground cumin

Dash of Tabasco sauce

¼ teaspoon kosher salt

¼ teaspoon freshly ground black pepper

8 to 10 tortilla chips

½ cup shredded cooked chicken meat

¼ cup sour cream

¼ cup grated cheddar cheese

1 tablespoon salsa or pico de gallo

METHOD

1. In a large mug, combine the oil, jalapeño, scallion, and garlic and microwave for 1 to 2 minutes until the vegetables are tender. Stir in the cilantro, tomato, cumin, Tabasco, salt, and pepper and mix well.

2. In a jumbo mug, layer 1 to 2 chips, 2 to 3 pieces of chicken, 1 tablespoon of sour cream, 1 tablespoon of the vegetable mixture, and 1 tablespoon of the grated cheese. Repeat until all the ingredients are used. Finish with a tablespoon of salsa, and microwave for 1 to 2 minutes until heated through. Serve immediately.
